Prior to 24w35a (1.21.2 snapshot), buckets of salmon would not save the size of the salmon. These no size buckets of salmon are unobtainable in 24w35a and later.
Obtaining
In 24w33a, different sizes of salmon were added to the game. In 24w33a and 24w34a, the size of a salmon was not saved when it was picked up in a water bucket due to a bug.[1] So, buckets of salmon with no size component are obtainable from 18w08b (when they were added) until 24w34a. The size is stored as type in minecraft:bucket_entity_data since it was added.
