Java Edition:Untracked Statistics
This is an incredibly specific group of statistics. This refers to statistics that do not properly represent the world.
These stats are not unobtainable on their own. However, they are discontinued when compared to aspects of the world. Most of these are obtained by updating a world from before statistics were tracked.
Blocks as Items Without Blocks Mined Statistic
Certain blocks must be mined in order to obtain. Due to this, a mined statistic is required for these items. However, there are a couple of methods allowing these to exist as items without having a mined statistics. Note that the only way these count as discontinued as if the mining statistic is set to 0 due to item duplication.
Pre 13w36a World (Mine)
By updating a pre 13w36a world, some blocks can exist as items, and yet not have a mined statistic due to the stats not being tracked before 13w36a. Below is a list of all these blocks.
Overflow Method (Mine)
From 13w36a-1 through 20w06a, statistics could be overflowed. By overflowing and then going through the negatives back to 0, essentially a block can be mined while still having the mined statistic set to 0. However, this would require the player to mine 4,294,967,294 blocks, and is therefore not feasible. All blocks from 20w06a and before are possible from this method, however the list below only has items not possible from any other method.

Data Values Not Tracked (Mine)
Before 17w47a (13w36a-1 through 17w46a) Data values were not tracked by statistics. Therefore, certain blocks could be mined, and would increase statistics for the incorrect data value. The only blocks affected by this are leaves and grass variants, as they are the only data value block that can only be obtained by mining. This method allows for the player to obtain birch, spruce, jungle, and dark oak leaves while only increasing the statistics for oak and acacia leaves mined. It also allows for ferns to be obtained while only increasing the grass statistic, however this is not discontinued after 18w50a[test] due to the introduction of ferns in villager chests.
Statistics Not Properly Tracked from 14w02a-14w08a (Mine)
Due to the release times of snapshots 14w02a through 14w08a, the statistics file was still stored using the player name. If a world from 1.7.6 Pre 2 through 1.7.10 is updated to 14w02a through 14w08a, any actions during 14w02a through 14w08a will not be tracked by statistics. This allows for the same items without blocks mined as the Pre 13w36a method, as well as allowing for packed ice[a 6] and acacia leaves.[a 7]
Coral Blocks Not Requiring Silk Touch
From 18w10d when coral reefs were added through 18w15a mining coral and dead coral blocks did not require Silk Touch. This means that they could all be obtained via explosions, and therefore not have a mining statistic. Brain, Bubble, Horn, Fire, and Tube Coral Blocks are not discontinued in later versions due to the regular coral variants being a trade from wandering traders, however the dead versions of Brain, Bubble, Horn, Fire, and Tube Coral Blocks are still discontinued without a mining statistic.
Nether Sprouts Not Requiring Shears
From 20w06a through 20w18a, nether sprouts could be obtained using water, explosions or by breaking the block underneath instead of requiring the player to mine them. This was changed in 20w19a to require shears. Therefore, during this version range it was possible to obtain nether sprouts without receiving a mining statistic for them.
Nether Gold Ore Not Requiring Silk Touch
In 20w11a nether gold ore could be obtained by using explosions. This was changed in the next snapshot to require a Silk Touch pickaxe. Therefore in 20w11a nether gold ore could be obtained without increasing the mined statistic for it

Crafted Items Without Items Crafted Statistic
Certain items can only be obtained through crafting. Therefore, these items must have a crafting statistic associated with them. However, there have been multiple methods to obtain items that require crafting and yet not have a crafted statistic for them.
Pre 13w36a World (Craft)
By updating a pre 13w36a world, some crafted items can exist, and yet not have a crafted statistic due to the stats not being tracked before 13w36a. Below is a list of all these items.

Overflow Method (Craft)
From 13w36a-1 through 20w06a, statistics could be overflowed. Locked Chests Converting To White Stained Glass
Locked chests convert to white stained glass from 13w41a through 17w46a.[test] This allows for white stained glass to be obtained without increasing the crafting statistic.
Statistics Not Properly Tracked from 14w02a-14w08a (Craft)
Due to the release times of snapshots 14w02a through 14w08a, the statistics file was still stored using the player name. If a world from 1.7.6 Pre 2 through 1.7.10 is updated to 14w02a through 14w08a, any actions during 14w02a through 14w08a will not be tracked by statistics. This means any items crafted during this version range will not count towards items crafted. The items that are only possible using this method (excluding 20w14∞ and overflow) are iron trapdoors, slime blocks, and white stained glass panes.[b 10]
Red Sandstone Naturally Generating
From 14w32a through 1.9.4, red sandstone would naturally generate above mesa cave entrances. This would allow the player to obtain red sandstone without increasing the crafted statistic
Beacons Generating in End Ships
From 15w31a through 15w32b beacons would naturally generate in end ships. This would allow the player to obtain beacons without increasing the crafted statistic.
Skeleton Horses Dropping Ender Crystals
In 15w44a skeleton horses from skeleton traps would drop ender crystals. This was changed in the next snapshot so ender crystals required crafting to obtain. Therefore, in 15w44a ender crystals can be obtained without increasing the ender crystal crafted statistic.
Shulker Box Statistics Removed
Crafting a shulker box in 16w39a does increase the statistic for shulker boxes crafted, however in any later version this statistic gets removed due to an ID change. This is not discontinued in later versions unless the shulker boxes cleaned statistic is also 0.
Missing Colored Shulker Box Crafted Statistics
From 16w39b through 17w46a, crafting statistics did not exist for colored shulker boxes. This was changed in the next snapshot, causing colored shulker boxes without a colored shulker boxes crafted statistic to be discontinued.
Regular Shulker Box Converting to Purple
From 18w10b through 18w16a any regular shulker boxes updated from previous versions convert to purple ones. This allows for purple shulker boxes to exist without a purple shulker box crafted statistic. The only other way to obtain a purple shulker box is to craft it, therefore increasing the shulker box crafted statistic.
Stonecutters Do Not Count Towards Crafting
From 19w04a through 20w30a using a stonecutter did not increase the crafting statistic for the output item. This allowed for many stone and stone variants to exist without a crafting statistic. Below is a list of items possible using this method. Note this list does not include any items that have other methods to obtain introduced in this version range that still exist currently (for example ruined portals introducing a method for blackstone slabs)

Cleaned Banners Without Banners Cleaned Statistic
Whenever banners are cleaned using a cauldron they increase the banners cleaned statistic. However, due to the way banner patterns can be applied, there is only one possible discontinued combination: Ominous banners missing layers. Ominous banners with fewer layers are not possible from crafting due to the special colored name on ominous banners. The only way to obtain an ominous banner missing a layer with the banners cleaned statistic set to 0 is to kill a patrol captain holding an incomplete ominous banner in 18w45a.

Items in Ender Chest Without Ender Chest Opened Statistic
The Ender Chest Opened statistic was not added until after 1.8.1. From 1.8.1 and before, items could be placed in an ender chest, and since the statistic did not exist yet, the ender chest opened stat would not increase. After 1.8.1 the only method of placing items in an ender chest would increase the ender chest opened statistic.
Player in the Nether with No enteredNetherPosition
Tag
After a player enters the Nether, enteredNetherPosition
tag is created. This wasn't the case before 1.12-pre1, which allows for player in the Nether without enteredNetherPosition
tag.
Multiple Criteria Not Tracked Statistics
