Only fuel or a single bucket are permitted in the fuel slot of a smoker. Additionally, nothing can be placed in the output slot of a smoker, meaning that only items that are a result of a smelting recipe can go into that slot. Several methods allow different items to go into these slots.

18w50a is the first version where smokers have functionality. Any item can be placed in the smelting slot, and only fuel can be placed in the fuel slot. However, only food based recipes work in smokers. By downgrading a smoker to 18w49a, the smelting process will occur if it is a valid furnace recipe. This allows for any furnace recipe output item in the output slot of a smoker. This same method can be used to obtain invalid items in blast furnace output slots.

Warped/Crimson Fuel

From 20w06a to 20w12a (1.16 snapshots), you could use crimson/warped stairs, doors, planks, slabs, buttons, trapdoors, pressure plates, and signs (20w09a+) could be used as fuel. This bug was fixed in 20w13a. This is the only method that allows you to get these specific items in the fuel slot of a smoker. This same method can be used to obtain invalid items in blast furnace output slots and furnace output slots.
