Armor stands can be posed, however, it is not adjustable in survival mode. Armor stand's entity data would have a random pose in the Pose tag until 23w06a, where they now spawn with an empty Pose tag.
Obtaining
Random Armor Pose
From 14w32a, when armor stands were implemented, to 23w05a place an armor stand. It will have a slightly randomized Pose tag.
