In 24w14potato, Mojang changed villagers to trade poisonous potatoes when buying items, and Amber Gems when selling items. After updating or downgrading these villagers, a few different types of discontinued villagers can be obtained.

Downgrading

When downgrading villagers that have been traded with in 24w14potato to 24w09a - 24w12a, a few different things can happen. Firstly if the villager you downgrade does not have a buy trade as its first trade, then the villager will lose its ability to trade (temporarily creating a villager with no trades). After reloading the chunk, the villager will regenerate the current trade it should have for its level (eg. If a master level librarian only has sell trades, it will regenerate with 20 emeralds for a name tag as its only trade, as that is its current levels trade.) Alternatively, if the downgraded villager has a buy trade in it's first slot, each consecutive buy trade will be available. However buy trades that are after the first sell trade of the villager are permanently lost. The remaining trades are retained even when reloading, and the level of the villager is also retained (eg. If the villager was originally a master then it can't unlock any more trades, regardless of the amount it already has. This allows you to create master villagers, with only novice level buy trades, or master level villagers with only master level trades).

Upgrading

When upgrading villagers that have been traded with in 24w14potato into 24w13a - 24w38a (present), all of the sell trades that had amber gems in them are deleted. However all of the buy trades are retained regardless of the order that the trades were unlocked in. Unless the villager has only buy trades, all villagers should still have some trades when updating this way. This method allows for the creation of villagers with less trades then they would normally have. Both of these methods allow the villagers to be updated into future versions, without losing their professions or trades.
