Water in item form is a deleted discontinued feature. The item form of water was removed in 14w25a (1.8 snapshot). The item could be obtained during 3 version ranges, however, one period is unavailable as all the versions went missing.

Obtaining

Beta 1.6 Test Build 3 Debug Chests

In Beta 1.6 Test Build 3, any newly generated world would contain up to 11 debug chests with every item in the game. The water item was obtainable in the chests 1st and 4th from the left in the 8th and 19th slots respectively, in stacks of 64.

Uses

Water in the Nether

Using the water item players could create water in the Nether from the advent of the nether until the item's deletion. The placed water does not evaporate when placed like water buckets do.

Non Flowing Water

When the water item is placed the water does not flow. Floating water can be created but it must be against a block and removing that block it was placed upon will cause an update.
